Henriot Champagne Brut Souverain NV | Champagne, France
The first cuvée created by Apolline Henriot in 1808, Brut Souverain is crafted every year as a classic representation of this great Champagne House's style. She created the wine as a way of expressing the uniqueness of her vineyards year after year. The wine is balanced and precise with excellent freshness. It is made of a blend of the classic Champagne varieties: Chardonnay (50%), Pinot Noir (45%), and Pinot Meunier (5%). Each bottle rests for more than three years in the cellars in Reims. On the nose, there are aromas of citrus fruit, fresh flowers, and elderberry. On the palate, toasted bread, roasted almond, and white peach notes add to the overall complexity.
Flowers Chardonnay 2019 | Sonoma Coast, California
When it comes to coastal Chardonnay from Sonoma, few producers are more iconic than Flowers. They practice organic farming in vineyards set at high elevations overlooking the Pacific Ocean. The breezes and fog from the sea keep the grapes cool while ample sunshine allows them to ripen to perfection. The fruit for this wine come from a small selection of these family-owned vineyards, each carefully chosen for quality. Bright citrus notes, white flower, nuances of dried apricot, and hints of flint jump from the glass. The palate is energetic with great acidity and tension balanced with flavors of orchard fruit and almond, finishing long and bright.

This wine is both simple and elegant. A nice purple color. Delicate red fruit aromas on the nose. This is a great example of what the Pinot Noir grape can produce on the Burgundian terroir.
Faust Cabernet Sauvignon 2018 | Napa Valley, California
At Faust, they seek to express the complexity of Cabernet Sauvignon and the diversity of the Napa Valley by sourcing from estate vineyards in Coombsville and Rutherford, as well as from small lots on Atlas Peak, Mount Veeder, and Howell Mountain. The culmination of these exceptional appellations results in a prodigious expression of Cabernet Sauvignon. This wine jumps out of the glass with aromas of fresh black cherry and plum. Layers of savory cherry compote, earth, cedar and graphite are rounded out by a long finish with hints of dark chocolate, balanced acidity and minerality.
