STYLE/TASTING NOTES: Handcrafted and traditional sake with aromas of cocoa and clove, and notes of orange blossom and tangerine. The high polishing rate give this sake defined fruit and floral expression while still offering rich umami from the highly flavorful local hida-homare rice. Dry, lightly savory finish. This 900ml bottle is perfect for sharing and speaks to the old-fashioned culture within the brewery – to this day, 900ml is the smallest format that they produce. Savory and rustic style with smoky, nutty aromas. Flavors of melon, orange, and clove spice.

Bushido 'Way of The Warrior' Sake Can

STYLE/TASTING NOTES: On-the-go, hassle free, premium Ginjo Genshu sake in a can. Bushido is the ancient Japanese warrior code of moral values, loyalty, and honor until death. Usually unuttered and unwritten, the code allows the violent existence of the samurai to be tempered by wisdom and serenity. Tart raspberry, Asian pear, and watermelon rind with a hint of white flowers and a spicy finish.

THE WINERY: The personality and the style of our sparkling wines are determined by our soil, by the native varieties and by the biodynamic winemaking, which favours the biodiversity, energy and life of the estate as much as possible. It is our soils of marine origin that give our wines most typicity, providing them with saline, mineral notes that make our sparkling wines different from those produced on other terroirs throughout the world. REGION: Our dream is for the Raventós i Blanc wines to have their own name: Conca del Riu Anoia, the name of a small geographical area, centred around the River Anoia Basin, between the Catalan Pre-Coastal and Coastal Ranges. Strict winegrowing requirements that help us pass on and learn more about our viticulture tradition, the strength of our land, the typicity of our grapes and the characteristics of our soils. And the greatest of care in the production of our wines using the traditional method. Cava, Spain.
BLEND: ‘De Nit’ is a blend of 42% Macabeo, 37% Xarel.lo and 14% Parrellada with the addition of 7% Monastrell for complexity and its pale pink color. All grapes come from estate-owned, biodynamically-farmed vineyards in the Anoia River valley. The primary fermentation is in stainless steel with the secondary fermentation in bottle. It is aged for at least 18 months on the lees before release. ‘De Nit’ means ‘Of the Night’ in Catalan.
STYLE/TASTING NOTES: A creamy, floral nose leads to crisp, elegant and refreshing palate of berry fruit. A long and vibrant finish invites the next sip.
FOOD PAIRING: A wonderful aperitif, this wine is incredibly light in color with elegant, fine-textured bubbles. It pairs well with a variety of lighter fare as it has minimal sweetness and excellent acidity. Try with oysters or fried chicken.
Mercat Brut Nature NV Cava
THE WINERY: Inspired by Barcelona’s Mercat de Sant Josep de la Boqueria – the quintessentially Catalan market destination where locals and tourists alike gather to eat, shop and gossip. Mercat Cava aims to evoke the same spirit of community, liveliness, and tradition. The Cavas are made in the traditional method in the cellars of Moli Parellada in Sant Sadurní d’Anoia, led by winemaker Francisco Dominguez. Made from old vines of indigenous varietals, Mercat sees extended lees aging, low dosage, and is disgorged to order - all tenets of quality rarely seen in value sparkling wine.
REGION: CAVA - PENEDÈS | The first Cava was made in 1872 by Josep Raventós who experimented with wines using indigenous Spanish grapes made in the Champagne method. Unlike most classifications, the DO Cava is defined by a specific method of winemaking, rather than a geographical reference. There are over six regions with the DO Cava designation, though over 90% is from the Penedès, which is also generally regarded as the best in terms of quality. VINEYARDS: Mercat is a selection of plots with vines ranging from 15-40 years old, planted on calcerous and clay soils.
COMPOSITION: 50% Xarel.lo, 40% Macabeu & 10% Parellada
WINEMAKING: The wine is vinified in the traditional method, aged for 18 months (twice the minimum for the DO) and disgorged to order. Dosage: less than 0.5gr/l.
TASTING NOTES: A complex nose of ripe pear and brioche with zesty minerality on the palate and chalky soil notes. Stone fruits like apricots and nectarines are framed by a structure of acidity and limestone that show through due to the lack of dosage.

Through clever scheduling and controlled ripening, our winemakers used the challenging heat conditions to their advantage. This resulted in wine of good volumes, outstanding

sites in Columbia Valley, each bringing a new layer to our wine. Wahluke Slope Vineyard gives concentration and density with it's 35 year old vines. Northridge Vineyard is a mere 5 miles from Wahluke but a world apart in it's soil, lending bright acid and spectacular color to give the wine serious focus. Art Denhoed's Vineyard in Yakima Valley has a long cool season that contributes rhubarb, cedar and currants. The wine sees just enough new oak (15%) to add a touch more depth and richness.

STYLE/TASTING NOTES: Smoky and dark, this wine is easy to drink and pair with rich dishes. The fruit has an essence of cooked blueberry compote drizzled over a chocolate torte.
LO-VE Garnacha - GRN No. 5
STYLE: The style showcases the beautiful floral aromas of Garnacha. The wine offers a luxurious richness without overwhelming. It is powerful but the alcohol is restrained. Masculine and feminine qualities dance together in balance, each a compliment to the other.
TASTING NOTES: In the glass, the wine is inky purple-red to the rim. On the nose, the Garnacha smells of violet and red fruit with a note of lavender, a signature of quality in this variety. The palate is silky and restrained. Floral undertones linger.
FOOD PAIRING: This wine will highlight a variety of foods. Try it with Manchego cheese and roasted marcona almonds, stuffed Medjool dates with goat cheese and bacon or Ibirico ribs with potatoes and a rich caramelized sauce.
